Lemon Buttermilk Pancakes

For Shrove Tuesday, the Irish tradition is to serve pancakes with a squeeze of lemon juice and sugar. Being Canadian I can’t really eat pancakes without my beloved maple syrup so I decided to add some lemon zest to my trusty buttermilk pancake recipe which has evolved since my post on Canadian Blueberry Buttermilk Pancakes. These lemon buttermilk pancakes satisfy both the Irish & Canadian palettes in our household and are the perfect choice for Shrove Tuesday. They are fluffy buttery pancakes with the added citrusy zing of lemon.

Lemon Buttermilk Pancakes

Ingredients – 250g plain flour (sifted), 1 tbsp. baking powder, 1 tsp white sugar, 350ml buttermilk, 2 large eggs beaten, zest of 1 lemon.

Method – Combine all the ingredients in a mixer. Fry the pancakes with butter in a hot pan. Serve with maple syrup.
